- 120 red onion, finely diced
- 2 green chillies, finely sliced
- 40 lemon juice
- 25 olive oil
- 20 fresh coriander, chopped
- 150 injera, optional, torn
- 1 fine salt
- 0.5 black pepper

- Put the diced onion in the lemon juice with a pinch of salt for 10 minutes. This takes away some raw harshness while keeping the onion crisp.
