What you need
- 5 injera, day-old, torn into bite-sized pieces
- 220 red onion, finely chopped
- 250 tomatoes, finely chopped
- 22 berbere
- 10 Garlic, grated
- 45 niter kibbeh or sunflower oil
- 250 water
- 1 fine salt
- 1 green chilli, sliced
Step-by-step method
Follow the recipe in order, tasting and adjusting seasoning where needed.
- Cook onion in a wide pan with a splash of water for 8–10 minutes until soft. Add niter kibbeh or oil and cook another 3 minutes.
- Stir in berbere and garlic for 30 seconds, then add tomato and cook 6 minutes until the tomato breaks down into a red sauce.
- Add water and simmer 3 minutes. Taste and season before the injera goes in because the bread will absorb both liquid and salt quickly.
- Add torn injera in two batches, folding rather than stirring hard. Allow the first batch to absorb sauce before adding the second.
- Cook 2–3 minutes only, until the pieces are hot and tender but some edges still remain recognisable. Add a splash of water if the pan looks dry before the centre heats.
- Serve immediately with sliced green chilli. Firfir becomes heavier as it sits, so do not hold it warm for long.
