Doro Wat

What you need
- 1400 bone-in chicken thighs and drumsticks
- 900 red onions, very finely chopped
- 120 niter kibbeh
- 70 berbere
- 25 Garlic, grated
- 20 ginger, grated
- 40 tomato paste
- 850 chicken stock or water
- 6 hard-boiled eggs, peeled and pierced
- 35 lemon juice
- 2 fine salt
Step-by-step method
Follow the recipe in order, tasting and adjusting seasoning where needed.
- Rub the chicken with half the lemon juice and a little salt and leave for 20 minutes while you begin the onion base.
- Put the finely chopped onions in a heavy dry pot over medium-low heat and cook 25–30 minutes, stirring frequently, until collapsed, sweet and beginning to colour. Add a splash of water whenever they threaten to catch.
- Add niter kibbeh and cook 8 minutes, then stir in berbere, garlic, ginger and tomato paste. Fry gently another 5 minutes, loosening with a little stock so the spices darken without burning.
- Add chicken and turn every piece through the spice paste. Pour in enough stock to create a thick braising sauce, cover partially and simmer 45–55 minutes until the chicken is tender.
- Pierce the peeled eggs in several places and add them for the final 15 minutes so they take on the colour and flavour of the sauce.
- Finish with remaining lemon juice and salt as needed. Rest 10 minutes and serve on injera, giving each diner chicken, sauce and egg.
