- 250 green lentils
- 100 red onion, very finely diced
- 1 green chilli, finely chopped
- 20 Dijon mustard
- 45 lemon juice
- 35 olive oil
- 25 fresh coriander, chopped
- 150 tomato, diced
- 1 fine salt
- 0.5 black pepper
Method

Follow the recipe in order, tasting and adjusting seasoning where needed.
- Rinse the lentils and simmer in plenty of water until tender but still intact, usually 18–22 minutes. Drain well and spread on a tray for 10 minutes so surface moisture evaporates.
- Whisk mustard, lemon juice, olive oil, salt and black pepper in a mixing bowl. Taste the dressing before adding lentils; it should be deliberately sharp.
- Add the still slightly warm lentils and fold through the dressing. Warm lentils absorb flavour more effectively than fridge-cold ones.
- When completely cool, add red onion, chilli, coriander and tomato. Fold gently so the lentils do not break into a paste.
- Rest 15 minutes, then taste again for lemon and salt; lentils often mute acidity as they sit.
- Serve cool or at room temperature with injera, keeping the salad fresh and loose rather than compressed.
