What it is

Reuben Sandwich in the kitchen

Reuben Sandwich is griddled rye bread filled with corned beef, Swiss cheese, sauerkraut and Russian dressing.

Why make it

Make Reuben Sandwich when you want a recognisable sandwich with a strong sense of place and a clear balance of bread, filling, moisture, acidity and texture.

Best with

lunch, casual dinner, street-food night, weekend cooking and global sandwich tasting menus

Method

Step-by-step

  1. Step 1

Drain and squeeze the sauerkraut so it is moist but not wet.

  2. Step 2

Spread dressing inside the bread and layer cheese, corned beef and sauerkraut.

  3. Step 3

Butter the outside of each sandwich.

  4. Step 4

Griddle over medium-low heat, pressing gently, until the rye is crisp and the cheese has fully melted.

  5. Step 5

Rest for one minute, then slice and serve hot.

Look for: deeply toasted rye, melted cheese and hot filling without sogginess Tip: Warm the meat briefly before assembly for a hotter centre and a faster melt. Avoid: using wet sauerkraut or heat that is too high, which burns the rye before the cheese melts
Storage

Make ahead and storage

Storage

Make ahead
