What it is

Muffuletta in the kitchen

Muffuletta is a sesame loaf layered with Italian cured meats, provolone and a punchy olive salad.

Why make it

Make Muffuletta when you want a recognisable sandwich with a strong sense of place and a clear balance of bread, filling, moisture, acidity and texture.

Best with

lunch, casual dinner, street-food night, weekend cooking and global sandwich tasting menus

Method

Step-by-step

  1. Step 1

Slice the loaf horizontally and remove only a little crumb if it is very thick.

  2. Step 2

Spoon olive salad and some of its oil over both cut faces.

  3. Step 3

Layer the cured meats and provolone evenly from edge to edge.

  4. Step 4

Close the loaf, wrap firmly and press for at least 20 minutes so the flavours soak into the bread.

  5. Step 5

Cut into wedges and serve at room temperature.

Look for: dense even layers and bread perfumed with olive oil without becoming soggy Tip: A short wrapped rest is essential; muffuletta tastes better after the olive salad has seasoned the bread. Avoid: using a flimsy loaf that collapses under the oily filling
Storage

Make ahead and storage

Storage

Store prepared fillings separately in the refrigerator and assemble as close to serving as possible.

Make ahead

Prepare sauces, pickles and cooked fillings ahead where practical; refresh, reheat or toast just before assembly.
