How to make Lampredotto

Florentine slow-cooked beef tripe in a crusty roll with salsa verde and chilli.

What it is

Lampredotto in the kitchen

Lampredotto is florentine slow-cooked beef tripe in a crusty roll with salsa verde and chilli.

Why make it

Make Lampredotto when you want a recognisable sandwich with a strong sense of place and a clear balance of bread, filling, moisture, acidity and texture.

Best with

lunch, casual dinner, street-food night, weekend cooking and global sandwich tasting menus

Method

Step-by-step

  1. Step 1

Simmer the cleaned tripe gently in seasoned stock with carrot, celery and onion until very tender.

  2. Step 2

Lift out the tripe and slice or chop into bite-size pieces.

  3. Step 3

Dip the cut face of each roll briefly into the hot cooking broth.

  4. Step 4

    Fill generously with hot lampredotto.

  5. Step 5

Finish with salsa verde and chilli, then serve immediately.

Look for: very tender tripe with a rich broth-soaked roll and bright herb sauce Tip: The bread dip should be brief—enough to season the roll without collapsing it. Avoid: boiling hard, which can toughen the tripe and cloud the broth
