What it is

Katsu Sando in the kitchen

Katsu Sando is crisp breaded pork cutlet in soft milk bread with tonkatsu sauce and cabbage.

Why make it

Make Katsu Sando when you want a recognisable sandwich with a strong sense of place and a clear balance of bread, filling, moisture, acidity and texture.

Best with

lunch, casual dinner, street-food night, weekend cooking and global sandwich tasting menus

Method

Step-by-step

  1. Step 1

Season and lightly flatten the pork cutlets to an even thickness.

  2. Step 2

Coat in flour, beaten egg and panko, pressing the crumbs on gently.

  3. Step 3

Fry at about 170–175°C until deep golden and cooked through; rest briefly.

  4. Step 4

Spread tonkatsu sauce on the bread, add cabbage and the hot cutlet.

  5. Step 5

Close, trim if desired and cut cleanly into halves or thirds.

Look for: crisp panko shell against ultra-soft bread with a juicy cutlet Tip: Rest the katsu for two minutes, then use a sharp knife for a clean cross-section. Avoid: cutting the pork immediately so juices soak the crumb coating
