Jambon-Beurre is the Parisian classic of crusty baguette, excellent ham and generous salted butter.

Why make it

Best with

lunch, casual dinner, street-food night, weekend cooking and global sandwich tasting menus

Method

Step-by-step

  1. Step 1

Use a very fresh baguette with a crisp shell and light crumb.

  2. Step 2

Split lengthways without cutting all the way through if possible.

  3. Step 3

Spread a generous, even layer of salted butter over both cut faces.

  4. Step 4

Fold in the ham loosely so it stays tender, adding cornichons or a trace of Dijon if desired.

  5. Step 5

    Close, cut and eat immediately.

Look for: a crisp baguette shell, soft butter and silky folded ham Tip: Butter at cool room temperature should spread without tearing the crumb. Avoid: using cold hard butter or dry bread
