Why make it

Best with

lunch, casual dinner, street-food night, weekend cooking and global sandwich tasting menus

Method

Step-by-step

  1. Step 1

Cook the chosen meat until well seasoned and browned, then keep hot.

  2. Step 2

Cook the chips until crisp and season generously.

  3. Step 3

Split the long loaf and spread with sauce and mayonnaise if using.

  4. Step 4

Layer salad, hot meat and a very generous quantity of chips along the whole loaf.

  5. Step 5

Add extra sauce, close, press lightly and cut into sharing portions.

Look for: an abundant cross-section with chips running through every portion and enough sauce to season the loaf Tip: Build immediately after the chips finish cooking and distribute filling end to end before slicing. Avoid: letting the chips go cold and limp before assembly
