Indian cuisine

Indian cuisine is a network of regional and community traditions shaped by climate, religion, agriculture, trade and migration. Rice, wheat, pulses, dairy, seafood, meat and spices are used very differently across the subcontinent, so no single curry or spice mix can represent the whole country.

Why Indian cuisine is worth exploring

Indian cuisine cannot be reduced to one spice profile or one national menu. It reflects ancient agricultural traditions, Hindu, Buddhist, Jain and Islamic foodways, Mughal courts, coastal trade, colonial encounters and enormous differences in climate, religion and local produce.

Why it is famous

Indian cuisine is known internationally for biryani, dosa, idli, curries, tandoori dishes, kebabs, chaat, dal, breads, sweets and countless regional rice dishes. Its appeal is broader than a list of classics, however: the cuisine comes alive in the contrast between street food, family cooking, regional produce and dishes reserved for celebrations.

Punjab is associated with tandoor cooking, breads and rich dairy; Gujarat has a distinctive vegetarian tradition; Bengal is known for fish, mustard and sweets; the south includes dosa, sambar, coconut and rice-based dishes; Goa carries strong coastal and Portuguese influences; Kashmir has its own aromatic meat and rice traditions.
