- 500 soft dates, pitted but kept whole
- 120 walnut halves
- 180 plain flour
- 140 butter
- 1.5 ground cinnamon
- 1 ground cardamom
- 30 icing sugar
- 35 pistachios, finely chopped
Method
Step-by-step method
Follow the recipe in order, tasting and adjusting seasoning where needed.
- Stuff each pitted date with a walnut piece and arrange them tightly in a single layer in a shallow serving dish.
- Toast flour in a dry frying pan over medium-low heat for 8–10 minutes, stirring constantly, until it smells nutty and turns light beige. It should not burn or form dark patches.
- Add butter and stir until the flour becomes a smooth paste. Cook another 2–3 minutes, then mix in half the cinnamon and cardamom.
- Pour the warm flour-butter mixture evenly over the dates, using a spatula to spread it into a thin blanket that fills gaps between the fruit.
- Cool until set, then dust with icing sugar and remaining cinnamon and cardamom. Scatter pistachios over the top.
- Cut into small diamonds or squares, making sure each portion contains at least one walnut-stuffed date.
