New Zealand cuisine

Lamb, seafood, and indigenous Maori dishes.

Food history

Why New Zealand cuisine is worth exploring

New Zealand cuisine rests on Māori food traditions and Pacific geography, later reshaped by British settlement and migration from across the Pacific and Asia. Seafood, lamb, dairy and outdoor cooking sit alongside renewed interest in Māori ingredients and techniques such as hāngī.

Why it is famous

New Zealand food is widely recognised for hāngī, green-lipped mussels, lamb, seafood, meat pies, pavlova and modern Pacific-influenced cooking. What gives the cuisine real depth, though, is the range beyond those classics: market food, home cooking, festive dishes and regional specialities that can change significantly from one place to another.

Regional food story

Māori food traditions vary by iwi and region; the South Island is closely associated with lamb, venison and cold-water seafood; coastal areas rely heavily on shellfish and fish; Auckland reflects strong Pacific and Asian migration.

Wine and drink pairings

What to drink with New Zealand food

When pairing wine with New Zealand food, match the structure of the dish first: fresh whites for seafood and herbs, medium reds for tomato, spice or roast meat, sparkling wines for fried or salty starters, and sweet or fortified wines for desserts.
