Trinidadian cuisine reflects Indigenous Caribbean roots, African heritage, Indian indentured migration, European colonial rule and Chinese, Syrian-Lebanese and other communities. The result is one of the Caribbean's most layered street-food cultures.

Why it is famous

Among the dishes and traditions most associated with Trinidadian cuisine are doubles, roti, curry chicken, callaloo, pelau, bake and shark and macaroni pie. They became famous for good reason, but they make more sense when seen as part of a wider food culture shaped by place, season and the way people actually eat at home.
