Tanzanian cuisine

Tanzanian food is shaped by maize fields, banana-growing highlands, Lake Victoria fish, Indian Ocean trade, Swahili coastal cooking and Zanzibar spice routes. Expect ugali, nyama choma, pilau, coconut sauces, plantains, beans, cassava, grilled seafood, tea-time snacks and generous stews made for sharing.

Tanzanian recipes shaped by ugali, spice, coconut and the Swahili coast

Tanzanian cuisine brings together inland African farming and pastoral traditions with centuries of Indian Ocean trade. On the Swahili coast and Zanzibar, Arab, Persian and Indian influences are especially visible in rice, spice and coconut dishes.

Why it is famous

Tanzanian food is widely recognised for ugali, pilau, nyama choma, mishkaki, chipsi mayai and Zanzibar spice dishes. What gives the cuisine real depth, though, is the range beyond those classics: market food, home cooking, festive dishes and regional specialities that can change significantly from one place to another.

Zanzibar is famous for cloves, seafood and cosmopolitan Swahili cooking; the mainland coast uses coconut and rice; inland regions rely more on maize, beans and meat; Lake Victoria communities have strong freshwater fish traditions.
