- 600 mussels, cleaned
- 600 clams, cleaned
- 400 prawns, shell on
- 400 white fish, 4 cm pieces
- 200 onion, 3 mm slices
- 200 red pepper, 5 mm strips
- 400 tomatoes, chopped
- 200 white wine
- 25 fresh coriander
Method
Step-by-step method
Follow the recipe in order, tasting and adjusting seasoning where needed.
- Scrub shellfish and remove mussel beards. Cut fish into 4 cm pieces so it does not overcook.
- Layer sliced onion, pepper, tomatoes and garlic in a cataplana or wide lidded pan. Add wine and simmer 8 minutes.
- Add clams and mussels, cover and steam 4 minutes. Add prawns and fish, reseal and cook 5–7 minutes more.
- Open carefully away from your face. Fish should be opaque, prawns pink and shellfish open. Discard closed shells.
- Finish with coriander and olive oil. Serve at once with bread.
