- 2 ground turmeric
- 1.5 fine salt
- 180 cold butter, cubed
- 130 ice-cold water, approximately
- 500 beef mince
- 160 onion, finely diced
- 60 Spring onions, sliced
- 12 Garlic, minced
- 2 fresh thyme, leaves
- 2 Jamaican curry powder
- 1 ground allspice
- 0.5 Scotch bonnet chilli, finely minced, to taste
- 45 breadcrumbs
- 180 beef stock
- 1 egg, for glaze

Step-by-step method
Follow the recipe in order, tasting and adjusting seasoning where needed.
- Mix flour, turmeric and salt. Rub in butter only until pieces range from pea-sized to flat flakes; visible butter helps create the characteristic layered crust. Add ice water just until the dough comes together, then chill 30 minutes.
- Cook beef mince in a wide pan until browned and crumbly. Add onion, spring onion, garlic, thyme, curry powder, allspice and Scotch bonnet and cook 5 minutes until aromatic.
- Add stock and breadcrumbs and simmer 4–5 minutes until the filling is moist but not wet. Cool completely; warm filling melts the pastry butter and makes sealing difficult.
- Roll the chilled dough about 3 mm thick and cut eight circles 16–18 cm wide. Spoon filling onto one half of each, leaving a clean border.
- Brush the edge with water, fold into half-moons and press firmly with a fork. Chill the shaped patties 10 minutes while the oven heats to 200°C.
- Brush lightly with beaten egg and bake 22–26 minutes until vivid golden-yellow, crisp at the edges and hot through. Rest 5 minutes before serving.
