  • 100g lardons
  • Onions, garlic
  • Flour

Description

Originally made with rooster, this dish is now typically prepared with chicken and slow-cooked for depth of flavour.

Instructions

  1. Marinate chicken in wine overnight.
  2. Sear chicken, then cook with wine, bacon, onions, and mushrooms for 2 hours.
  3. Thicken with a beurre manié or flour slurry.
