  • 250g ground almonds
  • 250g sugar
  • 5 eggs
  • Lemon zest
  • Icing sugar

Description

This flourless cake is made with ground almonds and lemon zest, traditionally served during pilgrimage.

Instructions

  1. Beat eggs and sugar, fold in almonds and zest.
  2. Bake at 180°C for 30–35 minutes.
  3. Cool and dust with icing sugar over a Santiago cross stencil.
