Ingredients

  • 4 pieces salt cod (desalted)
  • 4 garlic cloves
  • 1 chilli
  • 150ml olive oil

Description

Bacalao al pil pil is a silky emulsion created from salt cod and oil — simple ingredients elevated by technique.

Instructions

  1. Heat oil, add garlic and chilli, then remove.
  2. Add cod skin-side down, cook gently.
  3. Swirl pan until oil emulsifies with fish gelatin to form a sauce.
