Ingredients

  • 1 kg ripe tomatoes
  • 1 cucumber
  • 1 green pepper
  • 1 small onion
  • 1 garlic clove
  • 50g bread
  • 3 tbsp olive oil
  • 1 tbsp sherry vinegar
  • Salt

Description

Gazpacho is a chilled soup of raw, blended vegetables — tangy, nourishing, and wonderfully cooling.

Instructions

  1. Soak bread in water briefly.
  2. Blend all ingredients until smooth.
  3. Chill for at least 2 hours before serving.
  4. Garnish with chopped vegetables or croutons.
