- 250g mascarpone cheese
- ¼ litre cold strong black coffee
- 5 tbsp white vermouth or Marsala
- 200g sponge fingers
- Unsweetened cocoa powder or grated chocolate

- Separate the eggs in a bowl, beat the egg yolks with the sugar until the mixture becomes thick and creamy, beat the whites separately until stiff Add the mascarpone to the egg yolk mixture a spoonful at a time and stir into a smooth cream, finally fold in the beaten egg whites
- Mix the coffee with the Vermouth for Marsala In a shallow dish . Briefly dip half the sponge fingers in the liquid, soaking both sides, and arrange in a layer on the bottom of a shallow serving dish.
- Pour half the mascarpone mixture over the sponge fingers and dip the remaining fingers in the liquid and arrange on top of the mascarpone cream.
- Finally pour over the remaining rest of the mascarpone cream and smooth the surface.
- Cover and chill for about 2 hours before serving, sprinkle generously with cocoa powder (using a small sieve makes this easier) or grated chocolate.
