Ingredients

  • 4 tomatoes
  • 4 bell peppers
  • 200g rice
  • 1 onion
  • Mint and parsley
  • Olive oil
  • Salt and pepper

Description

Gemista is a summertime favourite — vegetables filled with fragrant rice, baked until tender.

Instructions

  1. Scoop out tomatoes and peppers.
  2. Sauté onion, mix with rice and herbs.
  3. Stuff vegetables, drizzle with oil, bake at 180°C for 1 hour.
