Ingredients

  • 500g giant butter beans
  • 1 onion
  • 2 carrots
  • 2 garlic cloves
  • 400g tinned tomatoes
  • Parsley and dill
  • Olive oil
  • Salt

Description

A hearty vegetarian Greek starter, Gigantes are slow-cooked and perfect served with bread.

Instructions

  1. Soak and boil beans until soft.
  2. Make sauce with sautéed vegetables and tomatoes.
  3. Combine beans and sauce in a dish, bake at 180°C for 40 minutes.
